   pumpkin apple soup​

  • 1 tbsp avocado or coconut oil

  • 1.5 cups diced onions

  • 5 cloves minced garlic

  • 2 cups diced celery

  • 2 cups diced carrots

  • 1 cup diced yams

  • 3 peeled, shredded apples

  • 1 cup pumpkin puree

  • 1 cup dried red lentils

  • 8 cups chicken broth

  • 1 tsp dried thyme leaves

  • 2 tsp cinnamon

  • 1 tbsp apple cider vinegar

  • grey sea salt and pepper to taste

heat oil in a large soup pot on medium, add onion and cook for 3-4 minutes. add garlic, celery, carrots and yams, cook for 3-4 more minutes. add pumpkin, lentils, broth, thyme and cinnamon. bring to a boil, then reduce heat and simmer for 30 mins, until veggies and lentils are soft. add vinegar, salt and pepper to taste. sprinkle with pumpkin seeds and serve. makes about 10 cups.

potato leek + lentil soup

  • 1 tbsp avocado or coconut oil

  • 1 large leek, thinly sliced (about 4 cups)

  • 8 cups diced yellow skinned potatoes

  • 1 cup diced celery

  • 10 cloves garlic

  • 1 tsp dried thyme leaves

  • 1 cups dried red lentils

  • 1-2 tbsp nutritional yeast

  •  6 cups vegetable broth

  • 1 can coconut milk

  • grey sea salt and pepper to taste

  • chopped bacon, optional

remove the dark and end parts or the leeks and slice in half lengthwise. rinse any dirt from between layers, and the slice in 1/4" slices. heat oil in a large soup pot on medium, add the leek + celery and cook for 5 minutes. add garlic, thyme, salt and pepper, cook 1-2 more minutes. add potatoes and mix well to combine, cook for 3-4 more minutes stirring regularly. pour in the broth and coconut milk, stir in the lentils. bring the soup to a boil, then reduce heat and simmer for 30 mins until lentils and potatoes are soft. add nutritional yeast, then using an immersion blender or high powered blender to puree the soup. topped with chopped bacon.

makes about 10 cups.

black bean veggie chicken soup

  • 1 tbsp avocado or coconut oil

  • 1.5 cups diced onions

  • 5 cloves garlic

  • 1 tsp dried ginger

  • 2 tsp cumin

  • 1 tbsp chili powder

  • 1 medium jalapeno, minced (seeds + stem removed)

  • 1 cup diced yams

  •  1 (28oz) can diced tomatoes

  • 4-6 cups chicken broth

  • 1 can coconut milk

  • 1 cup pumpkin puree

  • 1 (14oz) can black beans, rinsed

  • juice of a small lime

  • 3 cups chopped kale

  • 2 cups pre-cooked white rice

  • 8oz cooked chicken breast, diced

  • grey sea salt and pepper to taste

heat oil in a large soup pot on medium, add onion and cook for 3-4 minutes. add garlic, ginger and jalapeno, cook for 1-2 more minutes. add yams, cook for 3-4 minutes. add tomatoes, broth, cumin and chili powder and bring to a boil. reduce heat and simmer for 10-15 mins, until yams are soft. add coconut milk. pumpkin, black beans, chicken and pre-cooked white rice. cover and simmer for 5-10 mins. makes about 10 cups.
